Founded in 2004, Dispensa Emilia is one of the first fast service restaurant chains in Italy to feature traditional Emilia foods, particularly la tigella, a round flatbread typical of the Emilia Apennines, usually eaten filled with cold cuts, cheese and greens in season.
The name ‘tigella’ – known instead as ‘crescentina’ in the area around Modena – comes from the terracotta disc on which the dough was originally baked. The middle of this disc bore the imprint of the flower of life, an ancient fertility symbol that is represented in the center of the company’s logo.
