Our specialty is the tigella, prepared on the spot and filled with fresh ingredients. Classic, Gourmet, Vegetarian and Sweet: a cornucopia of fillings that change with the season. You’ve never had a tigella? Here’s a brief intro: the tigella is a thin round bread that originated in the Apennines around Modena, usually filled with cold cuts and cheese. Its true name is crescentina, but it is more widely known as tigella, the name of the terracotta disc in which it is cooked and on which there was traditionally inscribed the “flower of life”, an ancient symbol of fertility shared by many cultures.

In addition to tigelle, at Dispensa Emilia you can enjoy delicious pasta dishes from Emilia and creative salads enlivened by our balsamic dressings. Typical regional specialties from Emilia play a starring role in our recipes, prepared in the traditional way. A special mention goes to the Parma prosciutto we use in our recipes: aged at least 12 months, it bears the D.O.P. denomination, a guarantee of unique taste and quality.

Lambrusco: excellence from Emilia

To go with our delicacies, you can choose from a special selection of beverages or your favorite wines from Emilia. Lambrusco, the wine most often associated with Emilia, deserves special mention. In fact, as one travels the ancient via Emilia, from southeast to northwest, this wine changes from dry to mellow. Lambrusco from Sorbara is the lightest in color and the driest: in Modena it already presents a more delicate bouquet of wild berries, in Castelvetro it is full and round on the palate and the Salamino di Santa Croce is purple and emits a sweet aroma. Finally, the Reggio and Parma Lambruscos are the most mellow and full-bodied ones, with a creamy texture and a persistent aftertaste.

Traditional Modena D.O.P. balsamic vinegar Dispensa Emilia offers many dishes enlivened by a truly unique taste: traditional D.O.P. balsamic vinegar from Modena, made according to strict production rules and aged in small barrels of fine wood for 12 months, without the addition of antioxidants or coloring. In addition to the vinegar, you can sample our Dispensa Emilia balsamic dressing, a 100% natural product made by heating the must of Lambrusco and Trebbiano grapes. It’s perfect for many of our recipes, and will be for yours as well!
